Ingredients

  • 2 2/3 c. flaked coconut (7 oz.)
  • 1 c. slivered almonds
  • 1/2 c. butter or margarine
  • 3/4 c. granulated sugar
  • 1/2 c. light brown sugar
  • 1 tsp. vanilla extract
  • 1 tsp. coconut extract
  • 1 egg
  • 1 2/3 c. all-purpose flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 c. cornstarch

Directions

    Toast coconut and almonds on cookie sheet at 350° for 4 to 6 minutes.

    Watch carefully; stir occasionally.

    Cream butter and white and brown sugars until light.

    Add vanilla and coconut extracts.

    Beat in egg.

    Combine flour, baking soda, salt and cornstarch.

    Stir into butter mixture using a spoon rather than a mixer.

    Add coconut and almonds.

    Shape into 1-inch balls.

    Place on lightly greased cookie sheets.

    Bake at 350° for 10 to 12 minutes.

    Cool slightly before removing to a rack to complete cooling.
