Ingredients

  • 6 skinned and deboned chicken breasts
  • 2 c. Italian breadcrumbs
  • 2 eggs, beaten
  • 1 large bottle spaghetti sauce
  • 1 c. Mozzarella or Swiss cheese
  • 1 c. sliced mushrooms
  • 1 bag dumplings or egg noodles
  • 3 Tbsp. oil

Directions

    In a large, heavy skillet, heat oil on medium heat.

    Dip chicken in beaten egg.

    Roll in bread crumbs.

    Fry in hot oil over medium heat for 15 minutes, until golden brown.

    Drain on paper towels.

    Lay chicken in buttered casserole dish.

    Cover with cheese, mushrooms and spaghetti sauce.

    Bake 15 minutes at 375° to melt cheese and heat spaghetti sauce.

    Serve over noodles cooked according to package directions.
