- 4 tablespoons olive oil
- 4 chicken breast cut into 3 pieces on the diagonal
- 1/2 cup blanched almonds
- 4 onions peeled and finely chopped
- 2 garlic cloves peeled and finely chopped
- 2 1/2 pounds beefsteak tomatoes coarsely chopped
- 2/3 cup dry white wine
- 4 ounces pitted black olives
- 2 tablespoons parsley chopped
- crusty bread to serve, optional
Directions

1Heat oil in a deep frying pan, add the chicken, and cook over a medium heat for 4-6 mins, turning once. Add the almonds and cook, turning, for 1 minute. Reduce the heat and add the onion and garlic, cook for 1-2 mins.

2Add the tomatoes, white wine, and 2/3 cup water. Season to taste with salt and freshly ground black pepper and simmer for 6-8 mins.

3Stir through the olives and parsley. Serve with crusty bread.
