- 1/4 c. butter or margarine
- 1 c. regular rice
- 1 small clove garlic, chopped fine
- 1/4 lb. Genoa salami, sliced thin and chopped
- 20 oz. chicken broth
- mushrooms (fresh or canned)
- 1/8 to 1/4 c. Parmesan cheese
- parsley to taste
Directions

1Saute rice and garlic in the butter until golden brown.

2Put in a 2-quart casserole.

3Stir in remaining ingredients.

4Bake at 350° for about 1 hour.
