Ingredients

  • 1 lb. ground sausage
  • 1 lb. ground beef
  • 2 medium to large onions, chopped
  • 3 large garlic cloves, minced
  • 3 c. beer
  • 1/2 lb. fresh tomatoes, peeled and chopped
  • 1 jalapeno pepper, minced
  • 1 (8 oz.) can tomato sauce
  • 1/4 c. chili powder
  • 1 Tbsp. salt
  • 1 Tbsp. cumin
  • 1 1/2 tsp. paprika
  • 1 (1 lb.) can kidney beans
  • 2 to 3 Tbsp. yellow corn meal

    Brown meat well; drain on paper towels.

    Saute onions and garlic until soft.

    Place all ingredients (except beans and corn meal) in a large pot.

    Cook over low heat for 2 hours.

    Add beans and cook another hour.

    Degrease chili.

    Stir in corn meal and return to heat.

    Bring to a boil; stir constantly.
