Ingredients

  • 1 c. corn meal
  • 2 Egg Beaters
  • 1/2 (No. 2) can cream-style corn
  • 1 c. grated nonfat Cheddar cheese or 8 oz. Kraft Free cheese slices, chopped
  • 1/2 tsp. lite salt (optional)
  • 1/4 c. flour
  • 1/2 c. buttermilk
  • 1/2 c. liquid Butter Buds
  • 1 can Ro-Tel tomatoes, drained
  • 1 1/2 tsp. baking powder

Directions

    Beat Egg Beaters and add remaining ingredients, mixing well. Pour into a large cast-iron skillet that has been sprayed with nonfat cooking spray.

    Bake 50 to 60 minutes at 350°.
