- 1 1/2 c. creamed corn
- 1 c. yellow cornmeal
- 1/2 to 1 c. butter, melted
- 3/4 c. buttermilk
- 2 medium onions, chopped
- 2 eggs, beaten
- 1/2 tsp. baking soda
- 1 1/2 to 2 c. grated sharp Cheddar cheese
- 3 jalapenos (fresh or canned), diced (use gloves)
Directions

1Preheat oven to 350°.

2Grease a 9-inch square baking pan. Combine first 7 ingredients in a large bowl and mix well.

3Turn half of the batter into pan. Cover evenly with half of the cheese, then peppers, then remaining cheese.

4Top with remaining batter. Bake 1 hour.

5Let cool 15 minutes. Cut into squares.
