- 1 (3 lb.) fryer
- salt and black and red pepper to taste
- flour (enough to coat chicken)
- 3 Tbsp. fat
- 3 large chopped onions
- 5 ribs celery, chopped
- 2 cloves garlic, chopped
- 1/4 bell pepper, chopped
- 2 c. rice
- 1 can beer
- 2 tsp. salt
Directions

1Cut chicken into serving pieces.

2Season with salt and pepper. Coat well with flour; fry chicken until brown in hot oil.

3Then remove from skillet.

4Add vegetables and cook until wilted.

5Put chicken back in skillet and cover.

6Cook slowly until tender (about 30 minutes).

7Add rice to chicken.

8Stir thoroughly for 2 to 3 minutes.

9Pour beer over mixture and stir.

10Add salt and cook slowly (about 30 minutes) until rice is cooked.
