- 1 Tbsp. flour
- 1 c. or more raw duck, chicken or turkey giblets, ground
- 1 1/2 c. hot water
- 2 chopped white onions
- 2 chopped ribs celery
- 1/2 chopped green pepper
- 1/2 minced clove of garlic
- 1 tsp. salt
- 1/2 tsp. cayenne pepper
- 3 c. cooked rice
Directions

1Melt shortening in large skillet.

2Add flour.

3Cook and stir on low heat until dark red-brown.

4Add remaining ingredients (except rice).

5Cook on low heat for 1 hour.

6Combine with rice.
