  • 1 Tbsp. flour
  • 1 c. or more raw duck, chicken or turkey giblets, ground
  • 1 1/2 c. hot water
  • 2 chopped white onions
  • 2 chopped ribs celery
  • 1/2 chopped green pepper
  • 1/2 minced clove of garlic
  • 1 tsp. salt
  • 1/2 tsp. cayenne pepper
  • 3 c. cooked rice

    Melt shortening in large skillet.

    Add flour.

    Cook and stir on low heat until dark red-brown.

    Add remaining ingredients (except rice).

    Cook on low heat for 1 hour.

    Combine with rice.
