- 3 to 4 cloves garlic, chopped
- 1 c. chopped celery
- 3 Tbsp. olive oil
- 1/2 c. chopped bell pepper
- 1/2 c. fresh parsley or 2 Tbsp. dried
- 2 qt. canned tomatoes
- 1 1/2 c. uncooked rice
- 1 to 2 c. wine
- 1/2 to 1 lb. peeled shrimp
- 1/2 to 1 lb. cut up Polish sausage
- 1 to 2 c. cooked chicken or ham
- Cajun seasoning and salt to taste
Directions

1Saute onion, garlic, celery and bell pepper in oil for 5 minutes.

3Bring to a boil, then simmer slowly until rice is cooked, stirring often, about 45 minutes.
