Ingredients

  • 1 large onion, chopped
  • 3 to 4 cloves garlic, chopped
  • 1 c. chopped celery
  • 3 Tbsp. olive oil
  • 1/2 c. chopped bell pepper
  • 1/2 c. fresh parsley or 2 Tbsp. dried
  • 2 qt. canned tomatoes
  • 1 1/2 c. uncooked rice
  • 1 to 2 c. wine
  • 1/2 to 1 lb. peeled shrimp
  • 1/2 to 1 lb. cut up Polish sausage
  • 1 to 2 c. cooked chicken or ham
  • Cajun seasoning and salt to taste

Directions

    Saute onion, garlic, celery and bell pepper in oil for 5 minutes.

    Add remaining ingredients.

    Bring to a boil, then simmer slowly until rice is cooked, stirring often, about 45 minutes.
