- 1/2 recipe Pie Dough, made with lard
- 2 pints blueberries, washed and drained
- 1/4 cup sugar
- 1 1/2 tablespoons quick cooking tapioca
- 1 lemon, seeded and thinly sliced

1Preheat the oven to 400.

2Prepare the pie dough and chill it.

3In a mixing bowl, mix the blueberries with the sugar and tapioca.

4Line a 9-inch pan with enough lemon slices to cover the bottom.

5Fill the pan with the blueberry mixture.

6On a floured surface, roll out the pie dough 1/4 inch thick.

7Cover the berries with the dough.

8Trim and crimp the edges.

9Bake in the center of the oven 35 minutes, or until golden.

10Serve warm with vanilla ice cream or the rose hip variation.
