- 1 can chopped green chilies, drained
- 1 lb. Monterey Jack cheese, grated
- 1 lb. Cheddar cheese, grated
- 4 egg whites
- 4 egg yolks
- 2/3 c. evaporated milk
- 1 tsp. salt
- 2 Tbsp. flour
- 1/2 tsp. pepper
Directions

1Combine chilies and cheese and put in buttered casserole dish. Beat egg whites.

2Set aside.

3Combine egg yolks, milk, flour, salt and pepper.

4Mix well.

5Add egg whites (whites should be creamy).

6Pour mixture over cheese and chilies.

7Bake 40 minutes at 350°.

8Let stand 15 minutes before serving.

9Cut in squares.
