John Wayne Cheese Casserole

  • 1 can chopped green chilies, drained
  • 1 lb. Monterey Jack cheese, grated
  • 1 lb. Cheddar cheese, grated
  • 4 egg whites
  • 4 egg yolks
  • 2/3 c. evaporated milk
  • 1 tsp. salt
  • 2 Tbsp. flour
  • 1/2 tsp. pepper

    Combine chilies and cheese and put in buttered casserole dish. Beat egg whites.

    Set aside.

    Combine egg yolks, milk, flour, salt and pepper.

    Mix well.

    Add egg whites (whites should be creamy).

    Pour mixture over cheese and chilies.

    Bake 40 minutes at 350°.

    Let stand 15 minutes before serving.

    Cut in squares.
