- 6 oz. Junior Mints (four 1.6 oz. boxes)
- 3 (8 oz.) pkg. cream cheese, softened
- 1 tsp. vanilla extract
- 2/3 c. sugar
- 3 eggs
- graham cracker or chocolate crust for a 9-inch spring-form pan*
Directions

1Place Junior Mints in freezer and preheat oven to 350°.

2With an electric mixer or food processor, combine cream cheese and sugar until smooth.

3Add eggs, one at a time, beating well after each addition.

4Stir in vanilla.

5Pour into crust.

6Chop cold Junior Mints and sprinkle onto cheesecake.

7Bake 40 to 45 minutes or until just set.

8Cool on wire rack, then chill several hours or overnight.
