- 1/2 tsp. baking powder
- 1 c. corn meal
- 1/2 tsp. salt
- 1/4 tsp. soda
- 1 egg white
- 3/4 c. buttermilk
- 2 Tbsp. vegetable oil
Directions

1Preheat oven at 425°.

2Lightly oil iron skillet or heavy baking pan and heat in oven.

3Sift dry ingredients.

4Beat egg whites, buttermilk and oil; add to dry ingredients.

5Stir lightly with wooden spoon.

6Pour batter into preheated skillet.

7Bake 20 to 25 minutes or until done.
