- 1 12 cups graham cracker crumbs
- 6 tablespoons butter, melted
- 24 ounces cream cheese, softened
- 1 cup white sugar
- 1 tablespoon cornstarch
- 3 eggs
- 1 tablespoon fresh grated lime zest
- 23 cup key lime juice
Directions

1Combine graham cracker crumbs with butter.

2Press into bottom and partially up sides of 9inch springform pan.

3Refrigerate.

4Beat cream cheese, sugar, lime peel and cornstarch until smooth and fluffy in a large bowl.

5Beat in eggs ione at a time, just until smooth.

6Add key lime juice with mixer on low.

7Finish mixing byhand.

8Do not overbeat or cake will crack during baking.

9Pour batter into cooled prepared crust.

10Bake at 300 degrees for 55 to 65 minutes or until set.

11To minimize cracking, place a shallow pan half full of hot water on lower rack during baking.

12When cheesecake is set turn oven off and let stand in oven for 30 minutes with door slightly open.

13Refrigerate overnight.
