- 2 envelopes unflavored gelatin
- 1/2 c. cold water
- 3/4 c. sugar
- 1 1/2 c. boiling water
- 1/2 tsp. grated Key lime or lime peel
- 1/2 c. Key lime or lime juice
- 4 egg whites
Directions

1In a large bowl, sprinkle unflavored gelatin over cold water; let stand 5 minutes.

2Stir in sugar until blended.

3Add boiling water; stir until gelatin is completely dissolved (about 3 minutes).

4Add lime peel and juice.

5Chill until slightly thickened (about 15 minutes).

6In a medium bowl, beat egg whites until stiff.

7While beating gradually add gelatin mixture; beat until soft peaks form.

8Spoon into 8 dessert cups.

9Chill until firm (about 2 hours).
