Key West Guava Bread Pudding

- 10 to 12 oz. Cuban bread or French bread (about 3/4 loaf) stale preferably
- 5 large eggs, beaten
- 1 large can evaporated milk
- 1 can condensed milk
- 3/4 c. sugar
- 1 tsp. vanilla
- 1 stick margarine
- 1 large box guava paste (guava is a tropical fruit, made into paste)
Directions

1Tear bread into pieces.

2Soak in water 5 to 10 minutes.

3Pour into a colander; drain.

4Squeeze most of water out.

5Place bread in large bowl, add eggs, milks, sugar and vanilla; beat well.

6Melt butter in 9 x 13-inch pan.

7Add to mixture, then combine well and add back to pan.

8Cut guava paste into crosswise strips.

9Lay atop mixture in rows, almost touching.

10Push guava paste below liquid level, then bake in preheated 350° oven 1 hour.

11Check center for doneness.

12It will fall, that's okay.

13Serve warm or cold.
