- unsalted butter for frying
- 1/2 lb. Kipper fillets
- 1/2 lb. cream cheese
- 1 garlic clove, crushed
- 1 Tbsp. grated or creamed horseradish
- freshly ground black pepper
- lemon twist to finish
Directions

1Melt a knob of butter in frying pan.

2Add Kipper fillets and fry gently for 10 minutes or until fish is soft and will flake with a fork.

3Remove from pan, leave to cool, then remove any skin and large bones.

4Put Kipper fillets in bowl and mash with a fork. With a wooden spoon, beat the remaining ingredients.

5Add black pepper to taste; beat until pate is quite smooth.

6Spoon into container.
