Ingredients

  • 2 lb. Italian sausage or hamburger
  • 1 lg. can tomato paste
  • 1 lg. can tomatoes
  • 1 med. onion, chopped
  • 1 Tbsp. salt or to taste
  • 1 Tbsp. basil
  • 1 clove garlic, minced
  • pepper to taste
  • 1 box lasagna noodles (use about 8 noodles)
  • 1-1/2 lbs. Ricotta cheese or cottage cheese, if desired
  • 4 oz. Parmesan cheese
  • 3 eggs, well beaten
  • 1 Tbsp. parsley flakes
  • 1 lb. Mozzarella cheese, grated

Directions

    Brown meat and drain off grease.

    Add tomato paste, tomatoes, garlic, onion, basil, salt and pepper.

    Cook about 30 minutes. Cook noodles as directed.

    Mix in large bowl, Ricotta or cottage cheese, Parmesan cheese, eggs and parsley and set aside.

    In a 9 x 13 baking pan arrange 1 layer of noodles, then Ricotta mixture, Mozzarella cheese and meat sauce mixture.

    Repeat layers until you use all of mixtures.

    Bake at 425° for about 25 minutes.

    Cool for 15 minutes before cutting.
