Ingredients

  • 1 lb. ground beef
  • 1/2 c. chopped onion
  • 1 (6 oz.) can tomato paste
  • 1 1/2 c. water
  • 1 garlic clove, minced
  • 2 tsp. salt
  • 3/4 tsp. oregano
  • 1/4 tsp. pepper
  • 8 oz. lasagne noodles, cooked and drained
  • 1 lb. Ricotta or cottage cheese
  • 12 oz. Mozzarella cheese slices (low-fat)
  • 1/2 c. Parmesan cheese

Directions

    Heat oven to 375°.

    Brown meat and drain.

    Add onion and cook until tender.

    Stir in tomato paste, water, garlic and seasonings. Cover and simmer 30 minutes.

    In a 12 x 8-inch baking dish, layer half of noodles, meat sauce, Ricotta or cottage cheese and Mozzarella cheese. Repeat layers.

    Sprinkle with Parmesan cheese. Bake at 375° for 30 minutes or until heated through.
