- 4 to 5 lb. potatoes
- 2 to 3 medium onions
- 1 stick butter
- salt
- pepper
- 1/4 c. water
- 1 medium box Velveeta cheese
Directions

1Scrub potatoes.

2Leaving skins on, cut into slices about 1/4-inch thick.

3Peel onions and cut into 1/4-inch slices also. Separate into rings.

4Starting with potatoes, layer potatoes, onion rings, salt, pepper and pats of butter in a large casserole, ending with onion rings.

5Pour water in bottom of dish.

6Cover tightly with foil and bake at 350° for 1 to 1 1/2 hours or until tender.

7Remove from oven and cover with a layer of Velveeta.

8Put in oven just long enough to melt.
