- 4 lb. potatoes, peeled and thinly sliced (about 12 c.)
- 3 lb. ground beef
- 1 (17 oz.) can whole kernel corn, drained
- 1 (15 oz.) can tomato sauce
- 1 c. chopped green pepper
- 2 c. chopped onion
- 4 c. sliced carrots
- 2 c. shredded sharp cheese
Directions

1Divide potatoes between 2 (12 x 7 1/2 x 2-inch) baking dishes. Season with salt and pepper.

2Arrange corn and green pepper over potatoes in each casserole.

3Layer the onion then the carrots in each.

4Crumble beef evenly over the vegetables.

5Sprinkle with more salt and pepper.

6Pat gently to smooth.

7Top each casserole with tomato sauce.

8Bake covered at 350° for 2 hours.

9Uncover; sprinkle with cheese.

10Let stand 10 to 15 minutes before serving. Makes 2 casseroles, 8 to 9 servings each.
