- 1 cup honey
- 34 cup brown sugar
- 1 egg
- 1 tablespoon lemon juice
- 1 teaspoon lemon, rind of, grated
- 2 13 cups flour
- 1 teaspoon cinnamon
- 12 teaspoon allspice
- 12 teaspoon clove
- 12 teaspoon nutmeg
- 12 teaspoon baking soda
- 13 cup citron, finely chopped
- 13 cup almonds
Directions

1Heat honey until it bubbles and cool.

2Stir in sugar, egg, juice and rind.

3Cool to lukewarm.

4Add spices and flour.

5Stir.

6Add citron and nuts.

7Dough will be soft.

8Cover bowl and refrigerate at least 8 hours (Up to one week).

9Shape into 1-inch balls with floured hands.

10Flatten with 1/2 of an almond.

11Bake 1 inch apart on greased cookie sheet, 12-15 minutes at 375F until lightly browned.

12Glaze while warm.

13Glaze: 1 cup sifted powder sugar 5 Tbsp rum or water stirred until smooth.

14Store in air tight container and let mellow.
