Lemon Balsamic Vinnaigrette

  • 1 each shallots minced
  • 3 tablespoons lemon juice fresh squeezed
  • 1 teaspoon lemon zest
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon red wine vinegar
  • 1/2 cup olive oil, extra-virgin
  • 1 x salt to taste
  • 1 x black pepper to taste

Directions

    Whisk together in a bowl, all ingredients except the olive oil.

    Or whiz in a food processor.

    While whisking or running the food processor slow drizzle in the olive oil until emulsified.

    Even easier, place all ingredient in a jar with a tight-fitting lid and shake!
