- 3 egg yolks
- 2 tsp. grated lemon rind
- 1/3 c. lemon juice (3 lemons)
- 1 c. sugar
- 4 Tbsp. cornstarch
- 1/4 tsp. salt
- 1 1/2 c. boiling water
- 2 Tbsp. butter
- 1 baked (8-inch) pie shell
Directions

1Mix together egg yolks, lemon rind and juice; set aside.

2Mix sugar, cornstarch and salt in saucepan.

3Gradually stir in boiling water and cook, stirring constantly, until clear and thickened (2 to 3 minutes).

4Carefully stir in egg-lemon mixture; cook, stirring for 2 minutes.

5Remove from heat; stir in butter.

6Cool 5 minutes.

7Pour into baked pie shell.
