- 1 egg
- 3/4 c. milk
- 1/4 c. cooking oil
- 1 Tbsp. lemon juice
- 1 3/4 c. all-purpose flour
- 2 tsp. baking powder
- 2 tsp. finely shredded lemon peel
- 1/2 tsp. salt
Directions

1In a mixing bowl, beat together egg, milk, cooking oil and lemon juice.

2Stir together flour, sugar, baking powder, lemon peel and salt.

3Add to egg mixture just until moistened.

4Pour into a greased 8 x 4-inch loaf pan.

5Bake at 350° for about 45 minutes or until bread tests done.

6Cool in pan for 10 minutes.

7Remove from pan onto wire rack.

8Cool completely.

9Wrap and store overnight in refrigerator.
