Lemon Bread Pudding

  • 3 c. milk
  • 1 1/2 c. dry bread or 2 c. soft bread, cut into small pieces
  • 4 Tbsp. butter
  • 3/4 c. sugar
  • 3 eggs
  • 1/2 lemon juice and grated rind
  • 3/4 tsp. vanilla

Directions

    Soak bread crumbs with milk 1/2 hour.

    Cream butter and sugar until fluffy.

    Beat in eggs, lemon juice, rind and vanilla.

    Stir in the milk mixture.

    Pour into a 2 1/2 quart baking dish.

    Place the dish in a pan of hot water and bake at 350° for 45 minutes or until a knife inserted in the center comes out clean.
