Lemon Bread Pudding

Ingredients
- 2 large lemons, juice and rind
- 1 c. white bread cubes
- 2 c. milk
- 1/2 c. sugar
- 3 tsp. butter
- 4 eggs, separated
- 1/2 tsp. salt
- confectioners sugar to taste
Directions

1Preheat oven to 350°.

2Grease 1 1/2-quart baking dish.

3Grate lemon rind over bread cubes in large mixing bowl.

4Bring milk and sugar to a boil; add butter and pour over bread cubes; cool.

5Add beaten egg yolks and lemon juice to the bread mixture.

6Beat egg whites and salt until whites form stiff peaks, then fold into bread mixture.

7Egg whites may be omitted if so desired.

8Pour into prepared dish and sprinkle with confectioners sugar.

9Place baking dish in a pan of hot water and bake at 350°

10for 1 hour.
