  • 3 eggs, beaten
  • 1 cup sugar
  • 1 tablespoon lemon rind, grated
  • 12 cup lemon juice
  • 60 g butter, chopped

Directions

    Combine all ingredients in a heat-proof bowl.

    Whisk constantly over simmering water until the mixture coats the back of a metal spoon.

    Remove from the heat and pour into warm, sterilized jars.

    When cool, store in the refrigerator till required.
