Lemon Cake Custard

- 3 eggs, separate whites and yolks
- 1/4 tsp. salt
- 1 c. sugar
- 2 Tbsp. butter (soft)
- 1/4 c. sifted flour
- 1 c. milk
- grated rind of 1 lemon
- 1/3 c. lemon juice
Directions

1Into a small bowl of mixer, put 3 egg whites and salt.

2Beat on number 8 speed until stiff but still moist.

3Into large bowl of mixer, put 3 egg yolks, sugar, butter and flour.

4Beat on number 3 speed until blended.

5Add milk slowly to yolk mixture still beating on number 3 speed.

6Add lemon rind, juice and egg whites. Beat on number 1 speed only until blended.

7Pour into buttered custard cups.

8Set in pan of hot water.

9Bake in 325° oven about 50 minutes.

10Makes 6 to 8 servings.
