- 3 Tbsp. butter
- 1 c. sugar
- 4 egg yolks
- 3 Tbsp. flour
- 1/3 c. fresh lemon juice
- 2 tsp. grated lemon rind
- 1 c. milk
- 4 egg whites
Directions

1Cream butter.

2Add sugar; gradually cream until light and fluffy.

3Add egg yolks and beat well.

4Add flour, lemon juice and grated lemon rind and mix well.

5Stir in milk.

6Beat egg whites until stiff.

7Fold in.

8Pour mixture into 9 x 5-inch loaf baking dish.

9Set baking dish in pan of hot water and bake at 325° for 40 minutes.

10Turn oven to 350° for approximately 10 minutes to brown. Can also use individual custard cups.

11Baking time might be slightly less.
