- 1 c. graham cracker crumbs
- 1 1/4 c. sugar
- 3 Tbsp. light Weight Watchers oleo
- 32 oz. low-fat cottage cheese
- 1 1/2 c. Egg Beaters
- 1/4 c. skim milk
- 1/4 c. flour
- 2 Tbsp. lemon juice
- 1 tsp. grated lemon rind
Directions

1Combine crumbs, 1/4 cup sugar and margarine.

2Press in pan (9-inch) and 1-inch up the sides.

3Combine cottage cheese and Egg Beaters until smooth.

4Combine with rest of ingredients with mixer.

5Pour into pan.

6Bake 1 hour and 15 minutes or until set. Cool in oven for 1 hour with door ajar.

7Chill at least 2 hours. Garnish with lemon slices if desired.

8Top with fruit.
