Ingredients
- 3 Tbsp. flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 4 skinless, boneless chicken breasts (1 lb.)
- 4 Tbsp. olive oil
- 1 medium onion, chopped
- 1 Tbsp. margarine
- 1 c. chicken broth
- 3 Tbsp. lemon juice
- 1/2 tsp. thyme or sweet basil
Directions

1In a bag combine flour, salt and pepper; shake to mix.

2Add chicken and shake to coat.

3Remove chicken and save seasoned flour.

4In large skillet heat 1 tablespoon oil on medium heat. Add chicken and brown on one side.

5Add remaining oil and brown on other side.

6Remove chicken.

7Add margarine and onion; stir in reserved seasoned flour and cook 1 minute.

8Add broth, lemon juice and thyme; bring to boil, stirring constantly.

9Return chicken; reduce heat and cover skillet.

10Simmer until chicken is cooked (around 5 minutes).
