- 3 whole chicken breasts, boned, skinned and defatted
- 2 garlic cloves, crushed
- garlic powder
- pepper
- 1/4 c. lemon juice (plus rind)
- 1/2 c. water
- Progresso seasoned Italian bread crumbs
- 1/4 c. chopped parsley
- 1/4 c. olive oil
Directions

1Lay breasts in Pyrex dish.

2Put crushed garlic over this, then a sprinkling of garlic powder and pepper.

3Blend lemon juice plus rind (put all or part of rind in food processor) plus water together.

4Pour over chicken.

5Cover chicken entirely with Progresso seasoned Italian bread crumbs.

6Then chopped parsley. Drizzle with olive oil over the top.

7Bake 1 hour in 350° oven uncovered.
