- 2 lemons, zest of
- 2 large eggs
- 14 cup sugar
- 14 cup lemon juice (fresh)
- 2 tablespoons butter
- 1 cup heavy whipping cream (whipped to stiff peaks)
Directions

1In a double boiler combine zest, eggs, sugar, and lemon juice.

2Whisk until blended.

3Simmer over low heat until thick, trying NOT to scramble the eggs!

4When thick enough to coat a spoon, remove from heat.

5Stir in butter.

6Strain thru a mesh sieve.

7Chill until cool.

8Stir in whipping cream.
