Lemon-Cream Fruit Parfaits

Directions

   In a mixing bowl, combine gelatin and boiling water.

   Stir until gelatin dissolves completely.

   Add ice cubes and stir until melted.

   Pour equal amounts into 4 parfaits glasses or wineglasses.

   Chill until set.

   In a mixing bowl, combine buttermilk, cream cheese, vanilla, lemon juice, lemon zest, and powdered sugar.

   Using an electric mixer, blend until smooth.

   Spoon equal amounts over set gelatin.

   Top each with 2 tablespoons whipped topping, 1 tablespoon crushed pineapple, 1/4 cup banana slices, and 1/4 cut strawberries.
