  • 1 6-oz. pkg. lemon Jell-O
  • 1 can evaporated milk, chilled
  • 1-3/4 c. hot water
  • 1/4 c. lemon juice
  • 1 c. sugar
  • Grated lemon rind
  • 2-1/2 c. vanilla wafer crumbs
  • 1/4 c. butter, melted

    Chill evaporated milk.

    Dissolve Jell-O in hot water in large bowl.

    Chill until partially set.

    Whip until fluffy.

    Add lemon juice and sugar while beating.

    Whip milk separately and fold into gelatin.
