Lemon Fruit Cake

  • 1 lb. butter
  • 6 egg yolks, reserve whites
  • 1 1/2 oz. lemon flavor extract
  • 1/2 lb. each candied cherries and pineapple or all cherries
  • 3 c. sugar
  • 4 c. cake flour
  • 1 qt. pecans, chopped

Directions

    Cream butter and sugar; add egg yolks, one at a time, beating well after each addition.

    Beat in 3 cups flour and lemon extract. Mix fruit, nuts and rest of flour in separate bowl.

    Add to batter.

    Beat egg whites until fluffy and stiff.

    Fold into batter.

    Pour into loaf pans.

    Bake at 325° for 30 minutes.
