- 1 lb. butter
- 6 egg yolks, reserve whites
- 1 1/2 oz. lemon flavor extract
- 1/2 lb. each candied cherries and pineapple or all cherries
- 3 c. sugar
- 4 c. cake flour
- 1 qt. pecans, chopped
Directions

1Cream butter and sugar; add egg yolks, one at a time, beating well after each addition.

2Beat in 3 cups flour and lemon extract. Mix fruit, nuts and rest of flour in separate bowl.

3Add to batter.

4Beat egg whites until fluffy and stiff.

5Fold into batter.

6Pour into loaf pans.

7Bake at 325° for 30 minutes.
