- 6 egg yolks
- 3/4 c. lemon juice
- rind of 1 lemon
- 3/4 c. sugar
- 1 pkg. Knox gelatine
- 6 egg whites
- 3/4 c. sugar
- 1 medium angel food cake
Directions

1Thicken egg yolks, lemon juice and sugar in top of double boiler.

2Dissolve 1 package of Knox gelatine in 1/2 cup water. Add to hot lemon mixture.

3Beat egg whites until stiff.

4Add 3/4 cup sugar to egg whites.

5Fold egg whites into warm lemon mixture. Tear angel food cake into bite-size.

6Alternate layers of lemon mixture and angel food cake in a spring mold.

7Set in refrigerator overnight.

8Ice with Cool Whip or serve with Cool Whip.
