Lemon Light Drop Cookies

  • 1 1/2 c. sugar
  • 1 c. shortening
  • 1 Tbsp. grated lemon peel
  • 2 eggs
  • 1 c. lemon or plain yogurt
  • 1 tsp. lemon extract
  • 3 1/2 c. all-purpose flour (lightly spooned into measuring cup)
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • sugar or chopped nuts

Directions

    In a large bowl, cream the sugar, shortening and lemon peel until light and fluffy. Add eggs; beat well. Add yogurt and lemon extract; mix well. Stir in flour, baking powder, soda and salt. Blend well. Drop by teaspoonfuls 2-inches apart on greased cookie sheet. Sprinkle sugar or chopped nuts over tops and bake at 350° for 10 to 12 minutes or until lightly browned around edges. Remove from cookie sheets immediately and cool.
