Ingredients
- pastry for single crust 9-inch pie
- 1 c. sugar
- 6 Tbsp. cornstarch
- 1/8 tsp. salt
- 1 1/2 c. cold water
- 3 egg yolks, beaten
- 2 Tbsp. butter
- 1/2 c. lemon juice
- 1 tsp. white vinegar
- 1 tsp. grated lemon peel
Directions

1Line a 9-inch pie plate with pastry; bake and cool.

2Combine sugar, cornstarch and salt in a heavy saucepan.

3Gradually stir in water, blending until smooth.

4Cook over medium heat, stirring constantly, until filling comes to a boil.

5Cook for 5 minutes. Remove from heat and stir small amount of filling into beaten egg yolks, mixing thoroughly.

6Cook 1 minute; remove from heat and stir in butter, lemon juice, vinegar and lemon peel.

7Cool.

8Add meringue.

9Bake at 350° for 15 to 18 minutes.
