  • 1 c. flour
  • 1/4 tsp. salt
  • 1/2 c. sugar
  • 3 Tbsp. lemon juice
  • 2 Tbsp. sugar
  • 1 tsp. baking powder
  • 1/2 c. butter
  • 2 eggs, separated
  • 1 Tbsp. lemon rind
  • 1/4 tsp. cinnamon

Directions

    Mix flour, baking powder and salt.

    Cream the butter and sugar. Add egg yolks.

    Add flour mixture alternately with lemon juice. Beat egg whites until stiff. Fold into batter with lemon peel.

    Fill lightly greased muffin pan 3/4 full.

    Mix cinnamon and sugar. Sprinkle 1/2 teaspoon over each muffin. Bake at 375° about 25 minutes.
