Lemon Nut Bread

- 1/2 c. shortening
- 1 c. sugar
- 2 eggs, lightly beaten
- 1 tsp. baking powder
- 1 1/4 c. flour
- 1/4 tsp. salt
- 1/2 c. milk
- 1/2 c. nuts (optional)
- grated rind and juice of 1 lemon
- 1/4 c. sugar
Directions

1Cream shortening and sugar.

2Add eggs and mix.

3Sift together dry ingredients and add to creamed mixture alternately with milk. Add nuts and lemon rind.

4Pour into buttered loaf pan.

5Bake at 350° for 40 to 45 minutes.

6Remove from oven and pierce in several places with small skewer.
