Lemon Nut Cake

- 6 eggs
- 4 c. flour
- 2 c. sugar
- 2 c. butter
- 2 oz. lemon extract
- 1 lb. shelled pecans
- 1 lb. white raisins (golden)
- 1 Tbsp. baking powder
- 1/2 tsp. salt
Directions

1Cream butter and sugar.

2Beat in eggs, one at a time.

3Add lemon extract.

4Add 3 cups flour that has been sifted with baking powder and salt; blend well.

5Add 1 cup flour to pecans and raisins; mix into batter.

6Mix well.

7Put into 9 or 10-inch tube cake pan that has been greased well and dusted with flour.

8Bake in a 275° oven for 2 hours.

9Let cool in pan for about 7 or 8 minutes; turn out.

10Cool and store like fruit cake.

11Better after a day or two.
