Lemon Oat Bars

Ingredients
- 14 oz. can sweetened condensed milk
- 1/2 c. lemon juice
- 1 tsp. grated lemon rind (optional)
- 2/3 c. butter or margarine, softened
- 1 c. brown sugar, firmly packed
- 1 1/2 c. all-purpose flour
- 1 tsp. baking powder
- 1 c. quick-cooking oatmeal
Directions

1Grease 9 x 13-inch cake pan.

2In small bowl, stir together condensed milk and lemon juice until blended (add lemon rind). Set mixture aside.

3In medium bowl, beat together butter and brown sugar.

4Stir together baking powder and oats; add to lemon mixture, stirring until well blended.

5Mixture will be crumbly. Spread half the mixture in pan, patting down firm.

6Spread lemon mixture over top; sprinkle with rest of oat mixture.

7Bake at 350° for about 25 minutes (until brown around the edges).

8Cool on rack 15 minutes.

9Chill before cutting into bars.

10Store in refrigerator.
