- 1 1/2 c. sugar
- 1/3 c. cornstarch
- 1 1/2 c. water
- 3 egg yolks
- 3 Tbsp. butter
- 1/4 c. lemon juice
- 1 Tbsp. grated lemon rind
Directions

1Mix in saucepan the sugar and cornstarch.

2Stir water in gradually.

3Cook over medium heat, stirring constantly, until mixture thickens and boils.

4Boil one minute.

5Slowly stir at least 1/2 of the hot mixture into egg yolks, then blend into hot mixture in saucepan.

6Boil one minute longer, stirring constantly. Remove from heat; stir in butter, lemon juice and lemon rind. Pour into baked pie shell.
