- 1 c. sugar plus 4 Tbsp.
- 3 Tbsp. cornstarch
- 1 c. boiling water
- 4 Tbsp. lemon juice
- 2 Tbsp. butter
- 4 eggs, separate yolks and whites
- grated rind of 1 lemon
- pinch of salt
- 1 (9-inch) pie shell
Directions

1Combine cornstarch and 1 cup plus tablespoon sugar; add water slowly, stirring until smooth and thick.

2Add egg yolks, butter, rind, juice and salt.

3Cook 2 to 3 minutes over medium heat stirring. Pour in shell.

4Cover with meringue made from 3 egg whites beaten stiff plus 2 tablespoons sugar.

5Bake 15 minutes at 300° until light brown.
