- 1 1/2 c. sugar
- 1 1/2 c. water
- 1/2 tsp. salt
- 1/2 c. cornstarch
- 1/3 c. water
- 4 egg yolks, slightly beaten
- 2/3 c. fresh lemon juice
- 3 Tbsp. butter
- 1 tsp. grated lemon peel
Directions

1Combine sugar, 1 1/2 cups water and salt in pan.

2Heat to boil. Mix cornstarch and 1/2 cup water to make a smooth paste.

3Add to boiling mixture, gradually, stirring constantly.

4Cook until thick and clear.

5Remove from heat.

6Combine egg yolks and lemon juice. Stir into thickened mixture.

7Return to heat and cook until bubbles again.

8Remove from heat.

9Stir in butter and lemon peel.

10Pour into baked pie shell.

11Top with meringue.
