- 7 Tbsp. cornstarch
- 1 1/2 c. sugar
- 1/2 tsp. salt
- 2 c. boiling water
- 3 egg yolks, slightly beaten
- 1/4 c. lemon juice
- 2 Tbsp. butter
- 1 Tbsp. grated lemon rind
- baked pie shell
Directions

1Combine the first 3 ingredients.

2Add the boiling water; cook until thick, stirring constantly.

3Add the slightly beaten egg yolks, into which a little of the mixture is blended.

4Simmer for 2 minutes, stirring constantly.

5Blend in the lemon juice, butter and lemon rind.

6Turn cooled filling into baked pie shell.

7Top with meringue.

8Bake at 350° until lightly browned.
