- 1 c. shortening
- 2 c. sugar
- 6 egg whites
- 3 1/2 c. all-purpose flour
- 2 tsp. baking powder
- 1 c. milk
- 1 tsp. vanilla extract
- Lemon-Pineapple Topping
Directions

1Cream shortening.

2Gradually add sugar, beating well at medium speed of an electric mixer.

3Add egg whites (at room temperature), one at a time, beating well after each addition.

4Combine flour and baking powder; add to creamed mixture alternately with milk, beginning and ending with flour mixture.

5Mix just until blended after each addition.

6Stir in vanilla.

7Pour batter into 3 greased and floured 9-inch round cake pans.

8Bake at 350° for 15 to 20 minutes, or until a wooden pick inserted in center comes out clean.

9Cool in pans 10 minutes; remove layers from pans.

10Let cool completely.
